Greek style
Peel and dice the onion. Peel the garlic and press it through a garlic press. Wash the parsley, shake it dry, and finely chop it. Heat the oil and fry the minced meat. Fry the onions and garlic. Deglaze the minced meat with the tomatoes and wine. Season with salt, pepper, and sugar, add 3/4 of the parsley, and simmer for about 5 minutes. Separate 2 eggs. Remove the minced meat sauce from the heat and stir in the egg whites. Melt the butter and sauté the flour in it. Deglaze with the stock and milk, bring to a boil, stirring constantly, and season with salt, pepper, and nutmeg. Melt half of the cheese in the sauce. Remove the sauce from the heat, stir the remaining egg and egg yolk into the sauce, and do not boil again. Cook the pasta, drain, rinse, and let it drain. Place half of the pasta in a greased ovenproof dish and sprinkle with half of the remaining cheese. Spread the minced meat mixture on top, add the remaining pasta, and pour the sauce over it. Sprinkle with the remaining cheese. Bake in a preheated oven at approximately 200°C for about 40 minutes. Sprinkle with parsley.
