Macaroni in a zucchini tomato sauce

Ingredients for 4 servings:

  • 400 g pasta (macaroni)
  • 400 g zucchini
  • olive oil
  • 2 garlic cloves
  • 8 tomatoes
  • 1 tsp sugar
  • Salt
  • Pepper, freshly ground
  • rosemary
  • Thyme
  • 100 g Parmesan

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Wash the zucchini and cut into thin slices. Briefly place the tomatoes in boiling water and then peel them. Then cut the tomatoes into small cubes. Peel the garlic cloves and finely dice them. Heat the oil in a pan. Briefly sauté the finely chopped garlic. Then add the zucchini slices and the diced tomatoes. Season with salt, pepper, sugar, rosemary, and thyme. Let everything simmer over medium heat for 15-20 minutes. In the meantime, cook the macaroni al dente. Then add it to the vegetables in the pan, sprinkle with the Parmesan cheese, and mix everything together gently once more.
