Macaroni with bacon, eggs and tomatoes

Ingredients for 4 servings:

  • 400 g pork back bacon
  • 500 g macaroni
  • 4 large tomatoes
  • 6 large eggs
  • salt and pepper
  • n. B. herbs

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Dice the bacon and fry in a large pan. Remove any excess fat, leaving a little fat in the pan. Cook the macaroni in plenty of salted water according to the package instructions. Add the macaroni to the bacon in the large pan and fry to taste. Add the tomatoes, stir through, and cover. Let it simmer for 5-10 minutes. Season the eggs with salt, pepper, and herbs, if desired, and pour them over the pasta, bacon, and tomato mixture. Mix everything thoroughly and let the eggs set.
