Ingredients for 4 servings:
- 120 g white bread or toast
- 4 garlic cloves
- 4 eggs
- 7 tbsp olive oil
- 750 ml water
- 1 tbsp paprika powder, hot
- ½ tsp salt
- some chives
- salt and pepper

Madrileño onion soup
Dry or toast the white bread, then cut into small cubes. Peel the garlic cloves and press them through a garlic press. Add the salt to the garlic, crush with a spoon, and stir. Finely chop the chives. Heat the oil in a saucepan and briefly sauté the garlic paste. Add the white bread and paprika and stir briefly. Add the water, stir, and cover. Let simmer over low to medium heat for 30 minutes. Crack the eggs into a mixing bowl and briefly beat them. Then slowly add them to the soup while stirring. Season with salt and pepper. Serve garnished with chives.
