Ingredients for 2 servings:
- 150 g flour
- 2 eggs
- 250 ml milk
- 300 g tomato(s) (vine tomatoes)
- 2 tbsp margarine
- basil
- oregano
- pepper
- Salt
- possibly cheese

Mix the flour with the eggs and milk. Add a pinch of salt and let it sit for half an hour. Thinly slice the tomatoes. Heat a tablespoon of margarine in a pan and add a ladle (or two small ladlefuls) of batter, covering the bottom. Carefully top the batter with the tomato slices and season with herbs, pepper, and salt. If desired, you can sprinkle a little grated Emmental cheese or similar on top of the pancakes while they’re baking.
