Avocado fries are pretty easy to make. You are welcome to try different variants of the breading.

  • First, remove the pit from a ripe avocado, peel the fruit and cut into sticks about one centimeter thick. Immediately pour some lemon juice over it, otherwise, the avocado will turn brown quickly.
  • Beat an egg and season with salt and pepper. In the meantime, you can preheat the oven to 250 degrees.
  • For the breading, mix 6 tablespoons each of grated parmesan and puffed amaranth with 3 tablespoons of peeled sesame seeds in a bowl.
  • Now dust the avocado fries with a little flour and then roll them in the egg and finally in the breading. Feel free to press the bread firmly. If you want it to be a little thicker, repeat the process of egg and bread.
  • Place the breaded fries on a baking sheet lined with parchment paper. The avocado fries are particularly crispy if you brush them thinly on both sides with a little olive oil.
  • After ten minutes in the oven, the fries are ready.

DIY: Vegan version of vegetable fries

If you eat vegan, you don’t have to do without delicious avocado fries.

  • The preparation of the avocado does not differ from the above variant.
  • Since you don’t use eggs for breading as a vegan, you use egg substitute powder. It cracks open like an egg. Season with some salt and pepper.
  • In another bowl, mix 50 grams of breadcrumbs with 50 grams of vegan parmesan. Incidentally, you can also easily make it yourself by mixing 50 grams of lightly roasted almonds with a tablespoon of yeast flakes and half a teaspoon of salt and grinding them finely.
  • Now dust the avocado sticks with a little flour, dip them in the egg substitute and coat them with the bread and parmesan mixture.
  • Now fry the chips on all sides in a pan with hot sunflower oil until crispy. To then absorb the excess fat, briefly place the avocado fries on kitchen paper.
