Make the filling for the pralines

To make chocolates yourself, you should first prepare the filling.

  1. You can use soft ingredients such as marzipan or nougat for the filling.
  2. If desired, mix the basic ingredient with small pieces of nuts or, for example, coconut flakes.
  3. You can also add different types of alcohol or rose water to the mass to give it a special aroma.
  4. They bring the mass into shape in the ice cube mold. You can also apply different ingredients in layers here.

Make chocolate pralines yourself: Prepare the couverture bath

The next step in making chocolates yourself is to melt the chocolate. If you heat chocolate directly in the pot, it will burn too quickly. Therefore, use a water bath:

  1. Heat water on the stove. It should be hot but not boiling yet.
  2. Take the water off the stove.
  3. Place a round bowl in the water. It is best if it is lying on the edge of the pot and touching the bottom of the hot water.
  4. Pour a little of the couverture into the bowl and stir until the couverture has completely melted.
  5. If the water cools down too much, put the whole thing back on the stove for a moment.
  6. Gradually add more chocolate until the couverture bath is ready.
  7. Make sure it doesn’t cool down too much.

Cover pralines with couverture

The classic way to make chocolates yourself is to use a chocolate fork.

  1. Press the filling into a mold and then carefully remove it again.
  2. If possible, avoid skewering the filling.
  3. Place the filling in the couverture bath and turn it over to one side by pressing.
  4. Lift them out with the fork and let them drain briefly.
  5. After that, place the praline on a surface that will allow it to cool.
  6. When the couverture has cooled slightly, you can add decoration.

Alternative: Pour pralines into molds

You can also make the pralines directly in the mold. To do this, proceed as follows:

  1. Fill the molds with melted couverture.
  2. Move them around a bit so the couverture coats the entire shape.
  3. Quickly pour off the chocolate. There should be some residue stuck to the mold.
  4. When the residues have cooled, they can be filled.
  5. Leave some space for the floor. In the end, pour some chocolate into the mold and let it cool down.
  6. When everything has cooled down, you can remove the finished pralines.
