Make yellow curry paste yourself – this is how it works

For your yellow curry paste you need the following ingredients:

  • 1 large onion
  • 5 cloves of garlic
  • 1 lime
  • 2 sticks of lemongrass
  • 100 grams of fresh ginger (organic quality)
  • 50 grams of fresh turmeric (organic quality) and an additional 2 tablespoons of turmeric powder
  • 2 kaffir lime leaves
  • 1 tablespoon whole cardamom
  • 1 tablespoon mustard seeds
  • 2 tablespoons coriander seeds
  • 1 tablespoon of salt
  • 2 teaspoons cumin
  • 1 to 4 dried chillies (depending on how spicy you like your food)
  • 1 tightly sealable glass with approx. 200 ml content

Making the seasoning paste: This is how the mixture works

Get all the ingredients handy and follow the steps below:

  • Peel the onion and roughly chop it.
  • Roughly chop the fresh ginger and turmeric root. Peeling is not necessary if you bought organic products.
  • Cut the bottom off the lemongrass and then remove the tough outer layer. Cut the grass into pieces.
  • Peel the garlic and cut the cloves in half.
  • Put all the ingredients you have just prepared in a tall container and squeeze in the lime juice.
  • Now add the remaining spices to the mixture and blend everything with a hand blender or blender.
  • Mix everything until a homogeneous mass is formed.
  • Pour the yellow curry paste into a sterilized glass and add some tasteless vegetable oil (e.g. rapeseed oil) to finish. This way the paste cannot mold.
  • Store the spice mix in the fridge and use it within 14 days
