Ingredients for 3 servings:

  • 400 g turkey breast
  • 400 g pasta (preferably small croissants)
  • 2 liters of water
  • 1 small can of tomato paste
  • ½ tsp pepper
  • ½ tsp sweet paprika powder
  • 1 tsp harissa paste
  • 1 small onion(s)
  • 2 liters of water
  • Salt

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Tunisian noodle soup

Finely chop the onions. Cut the turkey breast fillets into small cubes. In a small bowl, combine the tomato paste, paprika, pepper, and harissa with a little water (to make a thick sauce). Heat the oil in a large pot. Add the turkey pieces to the pot and brown. Add the onions and fry briefly. Stir in the tomato paste mixture and bring to a boil. Add 1 liter of water and bring back to a boil. Then add another 1 liter of water and repeat the process… wait until it boils. Then add the pasta and cook until soft. Season with salt before serving.
