Malfatti (spinach Dumplings) Vegetarian

The perfect malfatti (spinach dumplings) vegetarian recipe with a picture and simple step-by-step instructions.

  • 450 g Chopped spinach .. thawed
  • 1 mgr Onion .. finely chopped
  • 100 g Butter
  • 250 g Ricotta or cottage cheese
  • 150 g Parmesan .. grated
  • 3 Servings Egg or egg substitute (e.g. ground chia seeds)
  • Salt, pepper, nutmeg
  • 300 g Flour
  1. Fry the onions in about 30g of the butter until translucent.
  2. Drain the spinach well and squeeze it out (or add to the onions and stew a little until the water has largely evaporated). Let cool down.
  3. Mix the quark and egg substitute well and mix in the spices and 75g Parmesan.
  4. Add the spinach and onions, stir in.
  5. Work in the flour with the dough hook. The dough should be smooth and pliable. Let rest for 20-30 minutes.
  6. Boil 3 liters of lightly salted water in a saucepan.
  7. Cut and shape the cams with 2 spoons and simmer them in the boiling water (when the cams float tap. If you go up again immediately, they are done.)
  8. Drain and toss in the remainder of the melted butter
  9. Put the malfatti in a baking dish and sprinkle with the rest of the Parmesan.
  10. Bake in a preheated oven at 175 ° C for about 10 minutes.
