Mama's pork ragout

Ingredients for 2 servings:

  • 400 g pork neck, boneless and lean
  • 3 tbsp butter or lard
  • 1 large onion(s)
  • 3 gherkins or pickles
  • 2 tbsp tomato paste
  • salt and pepper
  • marjoram
  • ¼ liter broth, hot
  • 1 cup of sweet cream
  • 1 cup sour cream
  • 1 bunch of chives
  • possibly sugar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

Cut the meat into thin strips and fry in batches in hot fat. Add the roughly diced onion and fry. Dice the cucumber and add it to the meat along with the tomato paste, spices, and broth. Stir, cover, and simmer for about 1 hour. Then remove the pot from the heat and stir in the cream. CAUTION: Do not boil again! Season to taste and sprinkle with chives. If the acidity is too overpowering for you, you can add a little sugar. We always serve it with pasta.
