Mandarin muffins with marzipan

Ingredients for 1 servings:

  • 200 g flour
  • 2 tsp, leveled baking powder
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 1 orange(s), organic, zest of it
  • 3 eggs, size M
  • 200 g butter, room temperature
  • 1 can mandarin(s), drained weight 175 g
  • 100 g marzipan
  • possibly powdered sugar for dusting
  • possibly fat and flour for the mold

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

for 12 pieces

Preheat the oven to 200°C (top/bottom heat) or 180°C (fan oven). Grease a 12-hole muffin tin and flour it, or line the tins with baking paper. Drain the mandarins in a sieve. Cut the marzipan into small cubes. Wash the organic orange thoroughly and grate the zest. Mix the flour with the baking powder and mix with the sugar, vanilla sugar, orange zest, eggs, and butter using a mixer on low speed, then mix well for about 2 minutes on high speed. Briefly stir in the diced marzipan and fold in about half of the mandarins. Fill the muffin tin with this mixture. Distribute the remaining mandarins on top and lightly press them into the batter. Bake for 25-30 minutes on the middle rack. Let the muffins cool in the muffin tin for about 10 minutes, then remove from the tin and dust with powdered sugar, if desired.
