Ingredients for 4 servings:

  • 250 g rice pudding
  • 1 liter of milk
  • 2 small cans of tangerine(s)
  • 3 eggs, separated
  • 100 g butter
  • 80 g sugar
  • some lemon juice
  • Butter, in flakes
  • Sugar, for sprinkling

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the rice pudding in the milk until soft. Beat the egg yolks with the butter and sugar until frothy. Whisk the egg whites until stiff peaks form. Combine the egg white mixture and the mandarin oranges with the rice pudding, season with a little lemon juice, and fold in the beaten egg whites. Pour into a baking dish, dot with butter flakes, and sprinkle with sugar. Bake at 200°C (convection oven) for 20-25 minutes. Delicious for the cold season and a great alternative to a simple rice pudding dish.
