Mango and arugula salad with ginger dressing

Ingredients for 4 servings:

  • 1 mango(s)
  • 500 g cherry tomatoes or plum tomatoes
  • 100 g arugula
  • 25 g ginger, whole
  • 2 garlic cloves
  • 2 stalks of lemongrass
  • 4 tbsp salad cream (diet) or Miracle Whip
  • 2 tbsp soy sauce, sweet
  • Cayenne pepper

Peel the mango and cut the flesh into wedges or pieces. Wash, trim, halve, and slice the tomatoes. Trim and tear the arugula. Place the ingredients in a bowl. Peel and finely chop the ginger and garlic. Remove the outer leaves from the lemongrass and finely chop the inside. Mix these ingredients with the salad dressing and season with soy sauce (if you don’t have sweet soy sauce, you can use regular soy sauce and add 1-2 teaspoons of sugar) and cayenne pepper. Mix the dressing with the salad ingredients. Variations: If this is too vegetarian for you, you can add smoked salmon (thinly sliced ​​or cut into strips). If you like, you can also sprinkle the salad with roasted unsalted peanuts.
