Mango and goat cheese bites

Ingredients for 2 servings:

  • 1 mango(s), ripe
  • 100 g goat’s cheese roll
  • 2 tbsp balsamic vinegar, light, or other mild vinegar
  • 1 tbsp olive oil, mild
  • salt and pepper
  • 2 tbsp almond flakes, roasted

Instructions

Working time approx. 10 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 10 minutes

Peel the mango, remove the flesh from the stone, and then cut it into bite-sized pieces. Arrange them side by side on a plate. Place a piece of goat cheese on each mango piece. Mix the balsamic vinegar and olive oil, season with salt and pepper, and drizzle with the dressing. Let marinate for 2-3 hours. Sprinkle with the flaked almonds to serve. Perfect as an appetizer or as a side dish at a buffet.
