Ingredients for 2 servings:
- 350 g flour
- 250 g quark
- 250 g butter
- 1 pinch of salt
- 300 g bratwurst or minced meat
- 2 onions
- 40 g butter
- 200 g raw ham
- 200 g medium-aged Gouda
- 4 tbsp parsley, chopped
- 2 eggs
- salt and pepper
- 2 egg whites
- 2 egg yolks
Instructions
Working time approx. 40 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours 10 minutes
In a bowl, mix the flour with the quark, finely chopped butter, and salt to form a smooth dough. Wrap in foil and chill for one hour. For the filling, remove the sausage meat from its skin. Peel and chop the onion. Sauté in the butter until soft, add the sausage meat, and fry. Remove the pan from the heat. Finely dice the ham and grate the cheese. Mix both with the sausage meat along with the parsley and egg. Season with salt and pepper. Roll out the dough on a floured surface to a thickness of 3-4 millimeters. Cut out round cookies with a diameter of 12 cm. Brush the edges with egg white. Spread a little filling on half of the cookies. Place the unfilled dough pieces on top and press the edges firmly together. Place on a buttered baking sheet, brush with beaten egg yolk, and let rest for 15 minutes. Bake at 200 degrees Celsius for 20-25 minutes.
