Ingredients for 3 servings:
- 3 pork steaks
- 1 mango(s)
- 4 tomatoes
- 2 onions, red
- 1 piece(s) ginger, approx. 3 cm
- 4 sprigs of basil
- 3 tbsp rice vinegar
- 2 tbsp soy sauce
- 1 tbsp olive oil
- 3 tbsp lime juice
- 1 tsp chili flakes
- 1 piece(s) cinnamon stick(s), approx. 2 cm
- 1 tsp coriander seeds
- 1 clove(s)
- nutmeg
- Salt, coarse
- brown sugar
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes
Peel and trim the ginger, and finely grate it. Wash the tomatoes, remove the stems, and slice them. Peel, trim, halve, and finely slice the onions. Peel the mango and cut the flesh into slices, removing the stone. Wash the basil, spin it dry, and pick off the leaves. Rinse the steaks and then pat them dry with kitchen paper. For the dressing, mix the ginger, lime juice, sugar, rice vinegar, soy sauce, and half of the chili flakes in a bowl. Add the tomatoes, red onions, and mango to the bowl with the dressing, mix everything well, and marinate for at least 15 minutes. Finely grind the cinnamon, coriander, the rest of the chili flakes, cloves, nutmeg, and coarse salt in a mortar and pestle. Rub the steaks all over with 90% of the spice mix and let them rest for a while. Heat the olive oil in a pan. Sear the meat on both sides until seared, then reduce the heat and let the steaks cook slowly until cooked through. Remove the steaks from the pan, sprinkle with the remaining seasoning, and let them rest for a while. Slice the steaks, arrange them on plates with the salad, garnish with basil, and serve immediately.
