Grapefruit-banana curd with turmeric

Ingredients for 3 servings:

  • 250 g quark (20%)
  • 1 grapefruit(s)
  • 1 banana(s)
  • ½ lemon(s), juice
  • 1 packet of vanilla sugar
  • 1 tbsp honey
  • ½ tsp turmeric powder
  • some almond flakes
  • e.g. cinnamon sugar or brown sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Fit in winter!

Fillet the grapefruit and cut the segments into bite-sized pieces. Reserve two pieces for decoration, if desired. Peel the banana and roughly mash it with a fork along with the lemon juice. Place the quark in a large bowl, add the mashed banana and lemon juice, add the vanilla sugar and honey, and mix everything well until creamy. Meanwhile, toast the almond flakes in a non-stick pan until light brown. Add the grapefruit pieces to the quark and then stir in the turmeric powder to create a marbled texture. Ladle the quark into dessert bowls, garnish with the reserved segments, sprinkle with some toasted almond flakes, and serve. If you like, you can sprinkle a little cinnamon sugar or brown sugar on top at the very end, depending on how sweet you prefer it.
