Mango-apple-pear puree

Ingredients for 4 servings:

  • 6 apples
  • 1 mango(s)
  • 1 lemon(s), juice and zest
  • 40 g brown sugar
  • 150 ml pear juice
  • Cinnamon powder

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Wash the lemon. Grate the zest and juice the lemon. Peel the apples and mango and cut into large cubes. Pour the lemon juice over the fruit to prevent it from browning. Caramelize the brown sugar in a saucepan. Add the apples, mango, and zest and let it soften briefly. Deglaze with the pear juice and simmer for about 15 minutes. Purée with an immersion blender or in a blender. Season with cinnamon, if desired. Pour into clean jars and let cool. Refrigerate or freeze.
