Ingredients for 4 servings:

  • 2 mango(s), approx. 450 g pulp
  • 175 g sugar
  • 5 cloves garlic
  • 6 slice(s) ginger root
  • 4 tsp mustard seeds
  • 5 carnations
  • 5 cardamom pods, hulled
  • 1 tsp chili powder
  • 1 tsp salt
  • 150 ml vinegar
  • 100 g sultanas
  • 1 tsp garam masala

Instructions

Working time approx. 20 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 25 minutes; Total time approx. 3 hours 45 minutes

Sri Lankan recipe

Peel the mangoes, cut them into pieces, and toss them with half the sugar. Let them steep for about 3 hours. Crush the garlic, ginger, cloves, and cardamom pods with the salt in a mortar and pestle. Cook the vinegar with the remaining sugar, mustard seeds, chili powder, and garlic mixture for about 10 minutes. Add the mango, stir in the garam masala, and cook for another 10-15 minutes. Add the sultanas and pour into sterile jars while still hot.
