Mango – cucumber – salad

Ingredients for 2 servings:

  • 2 mangoes, ripe
  • ½ cucumber(s)
  • ½ chili pepper(s)
  • ½ onion(s)
  • ½ lime(s), untreated
  • ½ bunch mint or basil
  • 1 tsp honey
  • salt and pepper

Peel the mango and cut into small cubes. Wash the cucumber, but don’t peel it, and cut into small cubes. Finely chop the chili, mint (if you don’t like mint, use basil, which is also delicious), and onion and mix with the mango and cucumber. Zest the lime and mix in. Squeeze out the juice. Mix the lime juice, honey, salt, and pepper to make a dressing and gently toss it into the salad. If desired, you can use less honey, as the mango should also be quite sweet.
