Mango salad with crab and leek

Ingredients for 4 servings:

  • 1 mango(s)
  • 100 g North Sea crabs, cooked and peeled
  • 1 stalk(s) leek
  • 4 tbsp mayonnaise
  • lemon juice
  • Salt and pepper, black
  • chili flakes
  • Cayenne pepper
  • 1 tsp honey

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the mango, remove the pit, and dice the flesh. Slice the leek into thin rings, blanch, and squeeze the juices vigorously (very important, otherwise the salad will be too watery). Mix the mango cubes and leek rings with the prawns. Stir in 4-6 tablespoons of mayonnaise (do not overdo it). Season to taste with the remaining ingredients.
