Ingredients
 

  • 400 g Mango puree
  • 2 tbsp Sugar syrup - own production
  • 1 splash Lime juice
  • 2 small Egg Whites

Instructions
 

  • I had a lot !!! ripe mangoes .... and nobody likes to eat them anymore .... so I cut them in half, scraped out the pulp with a spoon and pureed them very finely
  • I mixed the mango puree with the sugar syrup (I always have some in stock)
  • Beat the egg white until it is half stiff and fold it into the fruit puree, then put the whole thing in the ice cream maker and, depending on the device, let it freeze for 30-35 minutes
  • Fill the sorbet into glasses and serve with a sprig of mint
  • That was a great pleasure ... the overripe fruit made the taste really stand out
