Mango-tomato salsa

Ingredients for 1 servings:

  • 1 m.-sized mango(s)
  • 3 large tomatoes
  • 1 ½ tbsp brown sugar
  • 2 tbsp white wine vinegar
  • 1 tsp garlic powder
  • 2 tsp tomato paste
  • 1 tsp chili flakes
  • salt and pepper
  • basil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Peel the mango and cut the flesh into small cubes. Dice 2 tomatoes, removing the stems if necessary. Briefly fry the tomato paste with the chili flakes in a little olive oil in a saucepan. Add the diced mango and tomatoes and heat until the liquid boils. Stir in the sugar and vinegar. Simmer uncovered for about 10 minutes, until the fruit is soft. Briefly pour boiling water over the remaining tomato, peel it, and cut it into small cubes. Puree the cooked mangoes and tomatoes and add the raw diced tomatoes. Season with salt, pepper, and garlic powder and simmer briefly. The diced tomatoes should still have some bite. Let it cool briefly and stir in the chopped basil. The salsa will become creamier as it cools and tastes great as a burger sauce.
