Manti – Turkish tortellini

Ingredients for 4 servings:

  • 250 g minced lamb or beef
  • 1 large onion(s), grated
  • 350 g flour
  • 1 m.-sized eggs
  • little water
  • 500 g natural yogurt
  • 3 cloves garlic
  • 3 tbsp butter
  • ¼ bunch parsley
  • 2 tbsp, crushed paprika powder, rose hot
  • salt water

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Mix the flour, egg, and a little water (for a firm dough) and knead until a lump-free dough forms. Cover the dough with a damp cloth and let it rest for 1-2 hours. Mix the minced meat with the grated onion, 3-4 tablespoons of paprika, salt, pepper, and parsley. Roll out the dough thinly, cut out small squares, and place the meat filling on top. Fold the corners of the dough squares together and press the edges down. Bring the salted water to a boil and cook the dumplings for about 5 minutes. Then rinse in a sieve with cold water. Melt the butter in a pan and briefly fry 2 tablespoons of paprika. Place the manti on top, fry briefly, and serve on a plate. Mix the yogurt, salt, and finely chopped garlic cloves together, place on the manti, garnish with parsley, and serve.
