Manu's Tortellini – Leftovers – Casserole

Ingredients for 2 servings:

  • 250 g tortellini
  • 70 g cherry tomatoes
  • ½ onion(s)
  • 50 g ham, diced, lean
  • 75 g cheese (Gouda), grated
  • 2 eggs, size M
  • 125 ml milk
  • 2 tbsp breadcrumbs
  • salt and pepper
  • Paprika powder, sweet

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Place the tortellini in boiling salted water and cook until al dente. Meanwhile, finely dice the cherry tomatoes and onion. Drain the tortellini and rinse with cold water, drain well, and then transfer to a baking dish. Top with the diced cherry tomatoes and onion, then scatter the small diced ham over the top. Finally, sprinkle with the cheese. Fill a shaker with the eggs, milk, breadcrumbs, and seasoning and shake well. Pour the egg mixture over the casserole. Bake in a preheated oven (convection oven) at 180°C for about 30 minutes.
