SABO – Spätzle Gratin

Ingredients for 4 servings:

  • 500 g spaetzle
  • 2 tbsp butter
  • 3 onions, cut into strips
  • 200 g bacon, diced
  • Paprika powder
  • Cayenne pepper
  • 4 egg yolks
  • 150 ml cream
  • 150 ml sour cream
  • 250 g mountain cheese, grated

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the spaetzle until almost al dente and drain. Slowly fry the bacon in butter, add the onions, and sauté for 4-5 minutes. Season well. Remove from the heat and let cool. Combine the cream, sour cream, and mountain cheese. Combine the bacon/onions and mountain cheese mixture and layer them with the spaetzle in a dish. Bake at 200°C for about 25-30 minutes.
