Ingredients for 1 servings:

  • 200 g flour
  • 1 tsp baking powder
  • 70 g sugar
  • 125 g butter
  • 1 pack of flavoring, orange baking
  • 1 pinch of salt
  • 100 g candied orange peel
  • 100 g ground almonds
  • 1 pack of flavoring, orange baking
  • 1 orange(s), juice
  • Powdered sugar for the icing
  • 1 tbsp orange juice for the glaze
  • possibly orange liqueur or almond liqueur for the icing
  • Candied orange peel for garnishing

Spanish-flavored orange cookies with almonds

Combine flour and baking powder, then knead in sugar, orange zest, and butter flakes. Halve the dough and roll out two 20 x 20 cm squares on lightly floured baking paper. Cover and chill for at least 30 minutes (a few hours or overnight is also fine). Finely chop the candied orange peel. Mix with the almonds, orange zest, and orange juice. Spread the filling evenly on one square and cover with the other square. Place on a baking sheet and pierce the surface several times with a fork. Bake at 200 degrees Celsius (180°C fan/convection oven) for 20-30 minutes until golden brown. Cut into triangles while still hot and cover with icing. Garnish with candied orange peel pieces. For the icing, take about 1 tablespoon of orange juice, add icing sugar a tablespoon at a time, and mix well. The thicker the icing, the firmer (and sweeter) the glossy layer. You can replace some of the juice with orange or almond liqueur. Makes about 30 cookies. I use orange zest because untreated oranges are hard to come by. One packet is supposed to be equivalent to the zest of one large orange.
