Ingredients for 4 servings:
- 250 g pasta, curly
- 200 g cheese, Emmental
- 200 g ham, cooked
- 4 gherkins
- 1 cup sour cream
- 2 tbsp cucumber juice
- 1 tbsp vinegar
- 3 tbsp oil
- Paprika powder, sweet
- salt and pepper
- Sugar
- possibly chives
- possibly eggs, boiled
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Cook the pasta al dente, drain, and drizzle with a little oil to prevent it from sticking together as it cools. Dice the cheese, ham, and cucumber and mix with the pasta. Caution: Wait until the pasta has cooled slightly, or the cheese will melt. For the sauce, add the liquid from the pickle jar, vinegar, and oil to the sour cream and mix. Add plenty of paprika until the sauce turns a little pink. Season to taste with a pinch of sugar, salt, and pepper. If you like, sprinkle finely chopped chives and/or a hard-boiled, chopped egg over the pasta salad before serving. The pasta salad can be eaten straight away, but it won’t hurt to let it rest in the fridge for a few hours so the sauce can absorb the sauce. It’s all very quick and easy. The pasta salad is delicious and will appeal to (almost) everyone. The recipe serves four people as a main course, but is also perfect for barbecues or buffets.
