Ingredients for 50 servings:

  • 125 g butter, soft
  • 100 g brown sugar
  • 1 packet of vanilla sugar (Bourbon)
  • 1 pinch of salt
  • 1 small egg(s)
  • 100 g hazelnuts, ground
  • 150 g flour
  • 200 g cake icing, white
  • 200 g cake icing, dark

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Cream the fat until creamy. Add the sugar, vanilla sugar, salt, and egg; mix until light and creamy. Knead in the nuts and flour. Form the dough into a ball on a floured surface and flatten slightly. Cover and chill for about half an hour. Preheat oven to 220°C (electric oven). Roll out the dough on baking paper into a rectangle (36 x 30 cm) 3-4 mm thick. Place on a baking sheet and bake for about 5 minutes. Melt the cake glazes separately in a water bath. Immediately remove the dough sheet from the baking sheet with the baking paper and cut into diamond shapes. To do this, first cut the cake sheet diagonally into 4 cm strips. Then cut lengthwise into strips at the same distance (do not slide the cake sheet apart). Spread the cake glaze alternately on top and marble with a fork. Lift the diamond shapes off the baking paper with a spatula. Place on a new piece of baking paper and allow the glaze to set.
