Ingredients for 4 servings:

  • 300 g mixed cereals (spelt semolina, green spelt meal, oat flakes)
  • 5 tbsp soy flour
  • 500 ml vegetable stock
  • 100 g amaranth
  • 100g quinoa
  • 350 g chickpeas, corn, peas… (cooked)
  • 50 g sunflower seeds
  • 50 g soy flakes
  • 1 onion(s) , (sautéed)
  • salt and pepper
  • 75 g grated cheese (vegan yeast spread)
  • 50 ml cream (vegan yeast spread)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Cook the amaranth and quinoa in 200 ml of vegetable stock. Mix the remaining grains with the soy flour. Pour over 300 ml of boiling vegetable stock, mix well, and let it swell for 30 minutes. Then mix all the grains well. Add the vegetables, sautéed onion, soy flakes, and sunflower seeds, mix everything well again, and season with salt and pepper to taste. Spread the mixture in a greased baking dish and press down. Bake at 200 °C (400 °F) for 20 to 30 minutes. Mix the cheese and cream, spread the mixture on top, and bake for another 10 minutes until lightly browned. If you’d like to make it vegan, you can also bake it with yeast glaze. That’s also delicious!
