Marianne Morbach's "Steamed" Potatoes

Ingredients for 10 servings:

  • 600 g smoked bacon, lean
  • 3 large onions
  • 4 kg potatoes, waxy
  • salt and pepper
  • Oil for frying
  • 100 ml water

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Finely dice the lean bacon. Peel the onions and slice them into thin strips. Heat the oil in a pan and fry the bacon. Add the onions and sauté until translucent. Peel the potatoes and cut them into thin slices. Place the potato slices on top of the bacon and onions, season with salt and pepper, and cook. Add about 100 ml of water and cover the pan with a lid. Steam the potatoes over medium heat for 30 minutes until tender. Turn the potatoes occasionally to ensure they cook evenly and crisp up. Tip from Marianne Morbach: This dish can be served with schnitzel, sausages, fried pork sausage, or salad.
