Maria's quick wholemeal bread

Ingredients for 1 servings:

  • 700 g wholemeal spelt flour
  • 600 ml water, lukewarm
  • 1 tsp honey, alternatively maple syrup
  • 1 tsp bread spice mix
  • 2 tsp, leveled salt
  • 30 g yeast
  • 100 g sunflower seeds or sesame, linseed, nuts
  • 2 tbsp milk or cream

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

Crumble the yeast into a bowl and add lukewarm water. Once the yeast has dissolved, add half the flour, the honey or maple syrup, bread spice, and salt, and mix well with the dough hook of an electric mixer. It should form a smooth, homogenous mixture, then add the remaining flour and almost all of the seeds. Grease a loaf pan; greasing a silicone bread pan is not necessary. Pour the batter into the prepared pan and drizzle the surface with milk or cream to create a beautiful crust. Sprinkle the remaining seeds on top. Place the pan on the lowest oven rack and place a shallow container containing some hot water underneath. Now preheat the oven to 200°C (top/bottom heat). After 15 minutes, increase the temperature to 250°C (482°F) and bake for another 45 minutes. The bread tastes delicious warm with garlic butter and red wine, but also cold – enjoy!
