Marinated anchovies à la Klaumix

Ingredients for 4 servings:

  • 400 g anchovies
  • 4 cm ginger
  • 4 cloves garlic
  • 2 large red chili peppers
  • 4 limes
  • 1 tsp fish sauce
  • 1 tsp soy sauce
  • 1 tsp black pepper, ground

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 30 minutes

Remove the head, backbone, and intestines from the anchovies. Juice the limes. Finely chop the ginger, garlic, and chilies. Mix the fish with all the other ingredients and marinate overnight in the refrigerator. Serve as a salad.
