Marinated chicken bites

Ingredients for 4 servings:

  • 800 g chicken thighs
  • 170 g yogurt, Greek
  • 2 limes, untreated
  • 5 tbsp olive oil
  • Salt
  • pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Ideal for summer, fresh and light

Skin the chicken thighs and cut each thigh into 4 to 6 bite-sized pieces. Mix with 50g yogurt, the grated zest of one lime, the juice of 1/2 lime, pepper, and 20ml oil. Cover and marinate in the refrigerator for at least one hour (you can also leave it overnight). Place the chicken pieces and the marinade in a pan, cover, and cook on medium heat for 10-12 minutes. Finally, increase the heat to high, remove the lid, and add salt to taste. Mix the remaining yogurt with salt, pepper, and 1 tbsp oil. Serve the chicken pieces with yogurt and fine lime wedges, then grate the zest of one lime over the top. Serve with crusty baguette or ciabatta.
