Marinated Chicken Fillets with Baked Tomatoes and Sweet Potato Sticks

The perfect marinated chicken fillets with baked tomatoes and sweet potato sticks recipe with a picture and simple step-by-step instructions.

Marinated chicken and oven tomatoes

  • 4 Chicken sausage
  • 100 ml Ketchup
  • 2 tbsp Raw cane sugar
  • 4 tbsp Olive oil
  • 2 Garlic cloves
  • 2 Shallots
  • 1 tsp Sweet paprika
  • 1 tsp Espelette pepper
  • Salt
  • Black pepper from the mill
  • 10 Vine tomatoes

Sweet potato sticks

  • 1 size Sweet potato
  • 2 tbsp Sunflower oil
  • Salt

Chicken sausages and oven tomatoes

  1. Put the ketchup in a bowl. Add 3 tablespoons of olive oil and the sugar. Grate the garlic and shallots with a fine grater. Add the paprika and the Espelette pepper, stir well and season with salt and pepper. Put the meat in the marinade and let it steep for a few hours.
  2. Then put the meatballs with the marinade in an ovenproof dish and bake at 180 degrees for 45 minutes. Halve the tomatoes, season with salt and pepper and mix with a tablespoon of olive oil and add to the chicken drumsticks after approx. 25 minutes.

Sweet potato sticks

  1. Peel the sweet potatoes and cut them into sticks and then put them in a freezer bag, add the sunflower oil and mix well and then place on a baking sheet lined with baking paper and then season with salt and then bake for about 15-20 minutes at 220 degrees.
