Marinated Chicken Fillets with Baked Tomatoes and Sweet Potato Sticks

Ingredients
 

Marinated chicken and oven tomatoes

  • 4 Chicken sausage
  • 100 ml Ketchup
  • 2 tbsp Raw cane sugar
  • 4 tbsp Olive oil
  • 2 Garlic cloves
  • 2 Shallots
  • 1 tsp Sweet paprika
  • 1 tsp Espelette pepper
  • Salt
  • Black pepper from the mill
  • 10 Vine tomatoes

Sweet potato sticks

  • 1 size Sweet potato
  • 2 tbsp Sunflower oil
  • Salt

Instructions
 

Chicken sausages and oven tomatoes

  • Put the ketchup in a bowl. Add 3 tablespoons of olive oil and the sugar. Grate the garlic and shallots with a fine grater. Add the paprika and the Espelette pepper, stir well and season with salt and pepper. Put the meat in the marinade and let it steep for a few hours.
  • Then put the meatballs with the marinade in an ovenproof dish and bake at 180 degrees for 45 minutes. Halve the tomatoes, season with salt and pepper and mix with a tablespoon of olive oil and add to the chicken drumsticks after approx. 25 minutes.

Sweet potato sticks

  • Peel the sweet potatoes and cut them into sticks and then put them in a freezer bag, add the sunflower oil and mix well and then place on a baking sheet lined with baking paper and then season with salt and then bake for about 15-20 minutes at 220 degrees.
