  • 4 Pc. Chicken legs
  • 10 Pc. Limes
  • 1 Pc. Lemon
  • 2 Pc. Onions
  • 5 Pc. Garlic cloves
  • 1 pinch Salt and pepper
  • 1 pinch Cumin
  • Caribbean spice mix
  • 4 Pc. Sweet potatoes
  • 200 ml Coconut milk
  • 1 pinch Nutmeg
  • 30 g Butter
  • 4 Pc. Tomatoes
  • 1 bunch Coriander
  • 1 Pc. Onion red
  • 1 shot Lime juice
  • 1 Pc. Chilli pepper
  1. Marinate the chicken legs in a container with the juice of the lime and lemon. Chop the garlic and onions and add to the meat. Add spices and let everything steep for a while.
  2. For the mashed sweet potatoes, cook the sweet potatoes for about 25 minutes and then mash them. Add the coconut milk, butter and nutmeg.
  3. To make the sauce, dice the tomatoes and onion and stir together with the coriander, lime juice, salt, pepper, vinegar, chilli and the olive oil.
  4. For the garlic mayonnaise aioli, mix the egg, mustard, sunflower oil, salt, pepper and garlic in a blender jar.
