Marinated goat cheese with pears

Ingredients for 4 servings:

  • 300 g cheese (goat cheese)
  • 5 tbsp oil (olive oil)
  • 5 tbsp Balsamic vinegar, white
  • Sea salt
  • Pepper, white from the mill
  • 1 sprig(s) coriander leaves
  • 4 bulb(s), solid

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Divide the goat cheese into 4 portions, mix the vinegar, oil, and spices well (you can also whip it with a milk frother), and pour it over the cheese. Let it soak in for at least an hour. Then let the marinated cheese warm up in a lukewarm oven (max. 100°C) for about 15 minutes. Finely chop the coriander, quarter the pears and remove the cores, but do not peel them, then cut them into small cubes. Arrange the cheese on four plates, sprinkle with chopped coriander, and arrange the pears over the cheese. Serve with a Riesling selection.
