Coconut muffins

Ingredients for 1 servings:

  • 60 g butter or margarine
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 60 g quark
  • 2 eggs
  • 150 g flour
  • 2 tsp, leveled baking powder
  • 100 g coconut flakes
  • 100 ml milk
  • 2 tbsp, heaped chocolate shavings

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Cream the butter, sugar, and vanilla sugar until fluffy, then stir in the quark and eggs. Combine the flour and baking powder, sift in, and stir in. Add the coconut flakes and enough milk to form a smooth batter. It shouldn’t be runny. Finally, add the chocolate chips. Divide the batter among 12 muffin cups and bake in the oven at 200°C (top/bottom heat) for about 20 minutes.
