Ingredients for 6 servings:
- 100 ml oil
- 50 ml soy sauce
- 2 tbsp Worcestershire sauce
- 1 tbsp lemon juice
- 2 tbsp mustard, medium hot
- 2 tbsp basil, dried
- 1 tbsp thyme, dried
- 1 tsp onion granules
- 1 tsp garlic granules or 1 fresh clove squeezed
- 1 tsp salt
- 1 tsp pepper
- 1 kg pork fillet(s)
- 350 g ham (farmer’s ham) in slices
- 1 large onion(s)
- 4 m.-sized tomatoes
- 1 bell pepper(s), green
Instructions
Working time approx. 30 minutes; Rest time approx. 8 hours; Cooking/baking time approx. 45 minutes; Total time approx. 9 hours 15 minutes
Combine oil, soy sauce, Worcestershire sauce, lemon juice, mustard, basil, thyme, onion granules, garlic granules, salt, and pepper in a large bowl. Cut the pork fillet into 2-3 cm slices, then add the marinade and mix thoroughly. Cover and refrigerate overnight. Occasionally, toss the meat in the bowl again. Dice the onion and bell pepper and place in a bowl. Quarter the tomatoes and remove any juice and seeds. Then cut into bite-sized pieces and add to the onions and bell pepper. Mix all three ingredients. Wrap the pork fillet piece by piece with the farmer’s ham, leaving the sides of the meat free. Then place the pieces in a baking dish. Sprinkle the onion, bell pepper, and tomato mixture over the pork fillet. Bake at 200°C (top/bottom heat) on the middle rack for 45 minutes. We served this with tagliatelle with a spicier tomato sauce.
