Marinated pork fillet

Ingredients for 4 servings:

  • 1 pork fillet(s)
  • 3 garlic cloves
  • 1 tsp marjoram
  • 1 tsp thyme
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp sweet paprika powder
  • 1 pinch of cumin
  • 1 tbsp olive oil

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 10 minutes; Total time approx. 12 hours 40 minutes

The day before, wash the fillet, pat dry, and trim. Peel the garlic, roughly dice, and crush it with salt. Then mix it with the other spices and olive oil to form a paste. Brush the meat with this and wrap it in cling film. Marinate overnight in the refrigerator. The next day, remove the meat from the film and cut into slices about 1 cm thick. Lightly flatten. Oil and grill on both sides until crispy or fry in a lightly oiled pan. Serve on a platter with black olives and lemon slices.
