Ingredients for 8 servings:
- 1 kg potatoes, small (!) new
- 1 organic lemon(s), juice and grated peel
- 150 ml vegetable stock
- 100 ml sherry vinegar, mature
- 50 ml olive oil, very good
- 5 cloves garlic, chopped
- 1 bunch parsley, flat, finely chopped
- Salt and pepper, white
Instructions
Working time approx. 20 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 25 minutes; Total time approx. 12 hours 45 minutes
Side dish for grilled food
Cook washed potatoes in salted water until al dente, let cool slightly, and peel. Pierce twice with a fork. Mix the lemon zest and juice, vegetable stock, vinegar, olive oil, chopped garlic, and finely chopped parsley well. Pour the sauce over the potatoes and place everything in a large, shallow dish. Let stand for at least 12 hours, stirring occasionally. Season with salt and pepper before serving. Delicious with grilled meat or fish.
