Marinated potatoes with zucchini

Ingredients for 4 servings:

  • 600 g potatoes, cooked
  • 1 zucchini
  • 2 tbsp oil, olive
  • 4 tbsp chili sauce (sweet chili sauce)
  • 1 tbsp honey
  • 1 tbsp soy sauce
  • 2 cloves garlic, finely chopped
  • 1 tbsp rosemary, finely chopped
  • some salt

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 45 minutes

delicious grilled side dish

Peel the cooked potatoes. Halve any larger potatoes, if necessary, and then place them all in a bowl. Halve the zucchini lengthwise and cut into approximately 1 cm thick slices. Add to the potatoes in the bowl. Combine the oil, chili sauce, honey, soy sauce, garlic, and rosemary and pour over the potatoes. Mix everything well and let it sit for at least an hour. Then transfer to a baking dish and sprinkle with salt. Bake in a preheated oven at 200°C for about 30 minutes. The potatoes go very well with grilled dishes, spare ribs, chicken, skewers, chops, meatballs, fish, etc.
