Gnocchi salad with arugula

Ingredients for 4 servings:

  • 500 g gnocchi, ready-made or homemade
  • 2 handfuls of arugula
  • 10 olives, black
  • 250 g cherry tomatoes
  • 125 g buffalo mozzarella
  • 1 tbsp mustard, medium hot
  • 10 tbsp Balsamic vinegar, light or dark
  • a few stalks of basil
  • some salt and pepper
  • 1 dash of olive oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Clean and wash the arugula. Wash and halve the cherry tomatoes. Cut the olives into rings and the mozzarella into cubes. Place everything in a bowl. Meanwhile, cook the gnocchi according to the package instructions and add it. Mix a dressing of mustard, balsamic vinegar, salt, pepper, and olive oil and pour over the ingredients. Mix everything well and season again to taste. Serve on plates and garnish with chopped fresh basil. The salad tastes best lukewarm. As a side dish or starter, this portion serves 4 people. As a main course, it serves 2.
