Ingredients for 4 servings:
- 250 g white beans (cooked, fresh or from a jar/can)
- e.g. salt and pepper
- 200 g onion(s)
- 1 garlic clove(s)
- 6 tbsp olive oil
- 3 tbsp vinegar (white wine vinegar)
- ½ bunch mint (or amount as needed)
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes
Soak the beans in water the day before. Cook the beans soaked the night before in salted water for about 40-50 minutes over low heat until tender, then let cool. Alternatively, use canned or jarred white beans. Peel the onions and slice them into thin rings. Peel and press the garlic clove. Mix the onions and garlic with olive oil and vinegar. Drain the beans well and add them to the dish. Season with salt and pepper and let stand for at least an hour. Finely chop the mint and carefully fold it in, leaving a few leaves for garnish if desired. I serve this with Parma ham and ciabatta bread.
