Ingredients for 4 servings:

  • 1 puff pastry, ready, round
  • 4 egg yolks
  • 4 tbsp cream or crème fraîche
  • 4 tbsp sugar
  • 4 tsp Calvados (also tastes good with rum, but then only 2 tsp)

Preparation: Grease a 25 cm diameter quiche dish and line it with the puff pastry. Cut the apples in half, then into thin slices, then reassemble them and place them tightly on the base. Bake at 200 °C for about 10 minutes. Mix the remaining ingredients and pour over the tart when the pastry is golden yellow. Continue baking until the egg mixture has set (about 20 minutes). Pour Calvados over the tart at the table and flambé. Serve while still hot (but it tastes good without flambéing too). Tip: I made the last quiche with 3/4 cup crème fraîche instead of 4 tablespoons of cream, which was even better.
