Marzipan almond croissants

Ingredients for 1 servings:

  • 200 g marzipan paste
  • 2 egg whites
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 50 g flour
  • 100 g almonds, sliced
  • 100 g dark chocolate coating

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour

Cut the marzipan into very small cubes, ideally in a food processor or Thermomix. Place it in a mixing bowl, add the egg whites, and mix with a mixer until smooth. Add the sugar, vanilla sugar, and flour one after the other and mix in. Preheat the oven to 175°C (fan). Line a baking tray with baking paper. Fill a piping bag with the batter and pipe croissants onto the tray. Sprinkle with the almonds. Bake the croissants for about 15 minutes, until not too brown. Let the baking paper and croissants cool on a rack. Melt the chocolate coating in a hot water bath, dip both ends of the croissants into the melted chocolate, and place them on the baking paper.
