Marzipan cookies with boiled egg yolk

Ingredients for 1 servings:

  • 6 egg yolks, hard-boiled
  • 120 g butter
  • 80 g sugar
  • 120 g almonds, ground
  • 180 g flour
  • 200 g marzipan paste

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Preheat oven to 180°C fan/convection oven. Mash the cooked egg yolk with a fork. Add the butter and sugar and mix. Add the almonds and flour, as well as the marzipan, torn into small pieces. Knead everything into a smooth dough. Using cling film, shape the dough into a log. Cut cookie slices from the log and place them on a baking sheet lined with baking paper. Bake the cookies for 10 minutes. Once cooled, they can be decorated as desired or enjoyed plain.
