Marzipan cookies with orange liqueur

Ingredients for 1 servings:

  • 150 g butter, melted
  • 150 g sugar
  • 100 g powdered sugar
  • 150 g flour
  • 200 g marzipan paste
  • 50 g candied orange peel, finely chopped
  • 1 m.-sized egg(s)
  • 1 tsp, leveled baking powder
  • 2 tbsp orange liqueur

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 14 minutes; Total time approx. 44 minutes

Cream the butter, sugar, and powdered sugar with a hand mixer until creamy. Dice, tear, or crush the marzipan, and finely chop the candied orange peel in a food processor. Add the flour, marzipan, candied orange peel, egg, baking powder, and orange liqueur and mix to form a smooth dough. Scoop small portions of the soft, slightly sticky dough with a teaspoon and place them well apart on a baking sheet lined with baking paper. The cookies will become flat and wide during baking. Bake at around 160°C (320°F) for about 14 minutes, until golden brown. Allow to cool thoroughly on the baking sheet. The cookies will be very soft after baking, so let them cool completely before removing them from the baking sheet. This will give them a crispy texture. You can, of course, decorate them. We love them plain, with a little dusting of powdered sugar at most. With the listed ingredients, I get about 7 trays of 16 cookies each, or 112 cookies. They should be stored in a tightly sealed container.
