Marzipan plum cake

Ingredients for 1 servings:

  • 1 kg plum(s), red or blue
  • 125 g butter or margarine
  • 125 g sugar
  • 100 g marzipan paste
  • 3 eggs
  • ½ bottle of bitter almond flavor
  • 4 tbsp milk
  • 250 g flour
  • ½ tsp baking powder
  • Fat for the mold
  • 2 tbsp powdered sugar for sprinkling

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 45 minutes

Wash the plums, pat dry, pit, and quarter. For the batter, beat the fat and sugar until fluffy. Cut the marzipan into small pieces, add them, and beat until smooth. Beat in the eggs one at a time. Stir in the baking flavoring and milk. Mix the flour and baking powder and gradually stir in. Pour the batter into a greased springform pan (26 cm diameter). Place the prepared plums tightly into the batter. Bake the cake in a preheated oven at 175 °C (top/bottom heat) for about 60 to 70 minutes. If necessary, cover with parchment paper after about 40 minutes of baking. Let the cake cool and dust with powdered sugar. Tip: The cake tastes even better if you stir 2 tablespoons of Amaretto into the batter instead of the baking flavoring.
